Join Chef as he tours Golden Bear Ranches!
Location: Golden Bear Ranch 8701 East Harney Lane in Lodi, and Wine & Roses kitchen.

The term “Farm to Fork” has become very popular in the restaurant industry today, but what does it really mean?  Join us and find out!  This informative class embarks on a journey with farmer, John Gibson as we visit Golden Bear Ranches. Golden Bear is a 120 acre organic ranch producing heirloom fruits and vegetables. John is a sixth generation farmer in the area and grows produce for many well known Napa and Northern California restaurants including our kitchens at Wine & Roses!  After our tour, we will return to W&R to prepare some dishes using the produce that we harvested at the ranch.

We will meet at the ranch at 9:50am. Please bring a hat, sunscreen and wear closed toe walking shoes. Tour begins at 10am. We will provide bottled water. Our menu will depend on the harvest.

 

Cooking 101

Join us for our 2nd Cooking 101 Class that explores some of the basic recipes and techniques for the novice or beginning cook. Chef John will show you how to prepare perfect Mac& Cheese, Spaghetti & Meatballs, Meatloaf, the proper way to bake a potato, and the correct way to prepare a fresh salad & vinaigrette dressing.
$59 per person, 6:30pm in the Garden Ballroom.

Knife Skills

Any Chef will tell you that the proper knife skills are essential to produce good food. This class will cover basic knife techniques, which knives to use for which tasks,  proper care of your kitchen cutlery, and also the selection and care of cutting boards. We will be using a Chef Knife (8″ or longer), a Paring Knife, and a Serrated Knife. Please bring your own knives. If you do not own these knives, you may pre-order an 8″ Chef Knife & Paring Knife for $35 + tax, and they will be waiting for you at the class. (Serrated Knife is available for separate purchase.)
$45 per person, 6:30pm in the Cellar Room.

French Cuisine in a Pressure Cooker

Every Kitchen should contain at least one pressure cooker!  Join Lorraine as she shares some recipes and secrets to producing fast, fresh, and delicious meals that are perfect for family gatherings, or entertaining. The menu includes; Beef Daube with mustard & herbs, Winter Pistou, and Poulet Cocotte Grandmere.  If you own a pressure cooker, please bring it to class.

The holidays are the perfect time to throw a cocktail party! A successful cocktail party is all about presentation, flavor and fun.  In this class, you will sample a variety of gourmet cocktail and appetizer recipes and walk away with the knowledge to throw a holiday festivus of your own. During the course of this class, you will sample a variety of holiday themed cocktails. You will dine on a smorgasbord of sweet and savory hors d’oeuvres. We will also discuss tips for affordable recipes, food preparation shortcuts, and other ways to make life easy for the busy party host.
